Ingredients

  • 8 Chicken legs or thighs
  • Buttermilk

Precook Chicken

  • Season, brine or marinate the chicken like you normally would, then pop it into a 350°F oven until the chicken is just cooked through, 30-40 minutes, depending on the size of your chicken pieces. Finally, let the chicken cool down before frying- this precooking step can even be done a day or two in advance and the chicken stored in the refrigerator.

First Wash Mix

  • 2 Eggs
  • 1 Teaspoon Salt
  • 1⅓ Cups Flour
  • ½ Teaspoon Black Pepper

Second Wash Mix

  • Tablespoon Salt
  • ½ Tablespoon Thyme
  • ½ Tablespoon Basil
  • Tablespoon Oregano
  • 1 Tablespoon Celery Salt
  • 1 Tablespoon Black Pepper
  • 1 Tablespoon Dried Mustard
  • 4 Tablespoon Smoked Paprika
  • 2 Tablespoon Garlic Salt
  • 1 Tablespoon Ground Ginger
  • 3 Tablespoon White Pepper
  • 2 Cups White Flour

Instructions

The Night Before

  • The night before, place the chicken pieces in a bowl and cover with buttermilk. Cover and refrigerate.

The Day Of

  • Heat a deep-fat fryer oil to 375°.
  • Set oven to warming mode, about 200 degrees.
  • In a shallow dish, beat eggs and 1-1/2 cups water; add 1 teaspoon salt and 1-1/3 cup flour and 1/2 teaspoon pepper.
  • In another large shallow dish, combine the above spices and 2 cups of flour. Mix throughly.
  • Dip chicken in egg mixture, then place in the flour mixture, a few pieces at a time. Turn to coat.
  • Working in batches, fry chicken, several pieces at a time, until golden brown and a thermometer inserted into chicken reads 165°, about 7-8 minutes on each side.
  • Place on cooling rack to let drain. Place in oven to keep warm.
