My Fried Chicken
This is my recipe modified from the leaked KFC recipe.
Equipment
- Deep Fat Fryer
- Mixing dishes
- Bowl for soaking chicken
- Cooling Racks
- Oven set to warming
Ingredients
- 8 Chicken legs or thighs
- Buttermilk
Precook Chicken
- Season, brine or marinate the chicken like you normally would, then pop it into a 350°F oven until the chicken is just cooked through, 30-40 minutes, depending on the size of your chicken pieces. Finally, let the chicken cool down before frying- this precooking step can even be done a day or two in advance and the chicken stored in the refrigerator.
First Wash Mix
- 2 Eggs
- 1 Teaspoon Salt
- 1⅓ Cups Flour
- ½ Teaspoon Black Pepper
Second Wash Mix
- ⅔ Tablespoon Salt
- ½ Tablespoon Thyme
- ½ Tablespoon Basil
- ⅓ Tablespoon Oregano
- 1 Tablespoon Celery Salt
- 1 Tablespoon Black Pepper
- 1 Tablespoon Dried Mustard
- 4 Tablespoon Smoked Paprika
- 2 Tablespoon Garlic Salt
- 1 Tablespoon Ground Ginger
- 3 Tablespoon White Pepper
- 2 Cups White Flour
Instructions
The Night Before
- The night before, place the chicken pieces in a bowl and cover with buttermilk. Cover and refrigerate.
The Day Of
- Heat a deep-fat fryer oil to 375°.
- Set oven to warming mode, about 200 degrees.
- In a shallow dish, beat eggs and 1-1/2 cups water; add 1 teaspoon salt and 1-1/3 cup flour and 1/2 teaspoon pepper.
- In another large shallow dish, combine the above spices and 2 cups of flour. Mix throughly.
- Dip chicken in egg mixture, then place in the flour mixture, a few pieces at a time. Turn to coat.
- Working in batches, fry chicken, several pieces at a time, until golden brown and a thermometer inserted into chicken reads 165°, about 7-8 minutes on each side.
- Place on cooling rack to let drain. Place in oven to keep warm.
