Buttermilk
Precook Chicken
Season, brine or marinate the chicken like you normally would, then pop it into a 350°F oven until the chicken is just cooked through, 30-40 minutes, depending on the size of your chicken pieces. Finally, let the chicken cool down before frying- this precooking step can even be done a day or two in advance and the chicken stored in the refrigerator.

Instructions
The Night Before
The night before, place the chicken pieces in a bowl and cover with buttermilk. Cover and refrigerate.
The Day Of
Heat a deep-fat fryer oil to 375°.
Set oven to warming mode, about 200 degrees.
In a shallow dish, beat eggs and 1-1/2 cups water; add 1 teaspoon salt and 1-1/3 cup flour and 1/2 teaspoon pepper.
In another large shallow dish, combine the above spices and 2 cups of flour. Mix throughly.
Dip chicken in egg mixture, then place in the flour mixture, a few pieces at a time. Turn to coat.
Working in batches, fry chicken, several pieces at a time, until golden brown and a thermometer inserted into chicken reads 165°, about 7-8 minutes on each side.
Place on cooling rack to let drain. Place in oven to keep warm.
